To rehydrate your dehydrated mushrooms, simply soak them in water for 20-30 minutes, or until they are soft and pliable! While soaking them in hot water is faster to rehydrate your mushrooms, using cold or room temperature water to soak them allows for a more intense flavor development. No! The white fuzzy stuff you might be seeing near the cut stems of your mushrooms is mycelium. Mycelium is the root-like network of mushrooms. This "fuzz" is the mushrooms continuing to try to grow and search for nutrients after being cut off from their rye grain "food source". It is completely edible but feel free to simply cut the end where it is growing if you'd like! Mold on mushrooms is almost always blue or green.
Storing mushrooms in the fridge in either cardboard boxes or brown paper bags is the best way for them to stay fresh. We recommend no longer than 1-1.5 weeks for our Lion's Mane and the oyster varieties and 2-2.5 weeks for the King Trumpets and Chestnuts. However, the sooner you eat them, the less water they loose or gain depending on how humid your fridge is!
Mushrooms are about 80-90% water. This means if your fridge dries them out, they can start to lose some of their water and, therefore, weight as time goes on. We always add an little more to each of our packages than what is listed on the sticker to try to combat this, however, they will start to dry out if left sitting too long. It is best to enjoy your mushrooms within a week of purchasing them!
Short answer is anything you want! I add mine to the bottom of my coffee cup before brewing my coffee then give it a good stir. The powder likes to stick to metal so if you have a wooden spoon, that works better. Its lack of mushroom flavor means it could be sprinkled over your morning oatmeal or eggs or in your favorite beverage!
